Vegan Fluffy Pancakes Recipe

If you are looking for an ethical and tasty way to start your morning, look no further! Try these savory, fluffy vegan pancakes.


Ingredients:

  • 1 cup of Whole Wheat Flour

  • 1 cup of Elmhurst’s Natural-Flavor Free Almond Milk

  • 2 ½ teaspoons of baking powder, ⅛ teaspoon of baking soda

  • *1 tablespoon of Apple Cider Vinegar (ACV)

  • 2 tablespoons of white cane sugar or syrup of your choice

  • 1 ½ teaspoons of vanilla extract

  • 2 tablespoons of almond oil or vegan butter (used on skillet)


*optional, not necessary


Preparation Time:

This recipe should take no more than 20 minutes. This does not include the ten minutes for the batter to rise.


Servings and Calories:

This recipe prepares 4 servings of Fluffy Pancakes. One serving of Fluffy Vegan Pancakes contains an estimated 242.6 calories.


Directions:


Step 1. Begin by combining the dry ingredients in a large mixing bowl. The dry ingredients: flour, baking soda & powder, and sugar should be combined.



Step 2. In a separate bowl combine the wet ingredients except vegan butter or the oil of your choice.

The wet ingredients: Almond Milk, Apple Cider Vinegar (ACV), Syrup (if sugar is not used), and Vanilla Extract.


Step 3. Create a circular opening in the dry ingredient bowl. Slowly add the wet ingredients into this bowl and make sure to not overmix the batter.




Step 4. Let the batter chill inside the bowl at your counter for ten minutes.




Step 5. Turn on your skillet, add your choice of vegan oils or butter, and cook the pancakes to your liking! Enjoy!
