Ingredients:
4.5 Tablespoons of Earth’s Balance Unsalted Vegan Butter
As well as 4 Tablespoons of MELTED Earth’s Balance Unsalted Vegan Butter
3 Teaspoons of Salt
1lb of Banza Elbows Chickpea Pasta (Low GI + Protein-Packed!)
4 Tablespoons of All-Purpose Flour
2 Cups of Elmhurst’s Natural-Flavor Free Almond Milk
2.5 Cups of Miyoko’s Creamery Sharp Vegan Shreds or a preferred Vegan Cheese
½ Cup of Vegan Breadcrumbs (see the first half of recipe for instructions)
½ Loaf of Sourdough Bread

This recipe prepares a large pan of Baked Mac and Cheese. There are eight servings for this dish. Each serving is approximately 433.25 calories.
Directions:
Step 1. Prepare the Vegan Breadcrumbs for the Recipe. Feel free to skip this step if you wish to purchase pre-made breadcrumbs. Start by adding Fresh Sourdough Bread to a Food Processor or breaking them up into small pieces (about ¾ inch cubes). Once the bread has become mini crumbs in your processor, add the crumbs to a baking sheet and bake at 300 Degrees Fahrenheit. Take out the breadcrumbs once they turn a light brown, this should be around the 10-minute mark. The bread crumbs should be toasted and left to completely cool on the baking sheet. The breadcrumbs will be used later in the recipe.
Step 2. Preheat the oven to 350 Degrees Fahrenheit. Apply a butter coat to a casserole dish.
Step 3. Grab a large pot and raise 3.5 Quarts of Water to a boil. Once the water is boiling, add salt and your choice of vegan macaroni. The macaroni should take anywhere from 12-15 minutes to become tender, neither too tough nor soft. Drain the pasta and keep it aside.
Step 4. Coat an additional saucepan with unsalted butter and pour, whisking in the flour and salt. After 3-5 minutes, whisk in 1 cup of the Almond Milk, and after a couple of minutes, another cup of Almond Milk. Let the mixture thicken.
Step 5. Add your choice of vegan cheese to the saucepan. Once the cheese completely melts, with the heat still raised, gently stir in the macaroni pasta. Then take off the heat.
Step 6. Add the macaroni and cheese to a casserole dish, coated lightly with butter, and top with your homemade or store-bought breadcrumbs. Bake for 15-20 minutes.
Step 7. Let the dish cool to an appropriate temperature and enjoy!
