Spaghetti and Meatballs!

When you go vegan you don’t have to give up your old favorites! All foods fit!

Ingredients:

Vegan Spaghetti:

  • 2 Banza Spaghetti Chickpea-Pasta Boxes

  • 1 Cup of Chopped Onion

  • 1 teaspoon of Garlic Powder

  • 3.5 Tablespoons of Almond Oil

  • 1 can of Low-Sodium (to bring out the flavor) Diced Tomatoes

  • 2 teaspoons of Salt

  • ½ teaspoon of Dried Oregano

  • 1/4 Cup of Chopped Basil

  • 5oz of chopped-cremini mushrooms

  • ½ cup of yellow onion

Vegan Meatballs (By Scratch):

  • 1 ¼ cooked brown rice

  • ½ cup of yellow onion

  • 5oz of chopped-cremini mushrooms

  • 1/2 cup of breadcrumbs (see homemade step - requires 1/4 loaf white/sourdough bread)

  • 1 cup of cooked black beans

  • 1 Tablespoon of ground flaxseed meal

  • 3 Tablespoons of water

  • ½ cup of brown rice flour

Preparation Time:

The Vegan Spaghetti should take about 30 minutes to prepare and boil, while the vegan meatballs would take about fifteen minutes. In sum, the total preparation and cooking time is forty-five minutes give or take.

Servings and Calories:

This recipe makes eight servings, each serving has approximately 414.75 calories. The calorie content will vary depending on the ingredients and products used.


Directions: 2 Parts

Part A: Vegan Spaghetti

Step 1. The Banza Pasta boxes are about 1lb of pasta together. The golden standard for each pound of pasta is to boil 4 to six quarts of water per pound of pasta (NYT). On medium to high-heat boil your pasta for about 8 to 12 minutes, looking for neither a too tough or soft texture. Add salt incrementally to the pan.



Step 2. While your pasta is boiling, in a separate skillet saute your mushrooms and onion. This means to melt over your vegan butter or almond oil, cooking and slowly browning your vegetables.



Step 3. Once you have sauteed your vegetables, add a can of low-sodium diced tomatoes to your skillet. Mix the combined ingredients adding your oregano, and garlic powder. We are holding aside the basil for the final touch.



Step 4. Once your pasta is cooked, drain the pasta and save some of the pasta water. The pasta water helps bind the pasta with the sauce.


Step 5. Lower the heat of your spaghetti sauce-pan and stir in your noodles. If you are using a crockpot, you can lower the heat to ‘warm’ to keep the pasta at the perfect serving temperature. Otherwise, you can bake the pasta in the oven for a couple of minutes after adding the meatballs - I would recommend this.



Part B: Vegan Meatballs from Scratch

Step 1. Begin by raising a skillet to medium heat, with almond oil or vegan butter of choice, sauteeing the cremini mushrooms and yellow onion.



Step 2. Prepare the Vegan Breadcrumbs for the Recipe. Feel free to skip this step if you wish to purchase pre-made breadcrumbs. Start by adding Fresh Sourdough Bread to a Food Processor or breaking them up into small pieces (about ¾ inch cubes). Once the bread has become mini crumbs in your processor, add the crumbs to a baking sheet and bake at 300 Degrees Fahrenheit. Take out the breadcrumbs once they turn a light brown, this should be around the 10-minute mark. The bread crumbs should be toasted and left to completely cool on the baking sheet. The breadcrumbs will be used later in the recipe.



Step 3. Activate your flax egg! Mix together your ground flaxseed meal and three tablespoons of water to activate the egg. Cool for fifteen minutes, to develop a more thickened texture.



Step 4. In a food processor or blender of choice (you can even do this by hand), combine all the ingredients listed in the guide, and blend completely. You should see a weird consistency, but trust the process!



Step 5. Roll the “meatball” mixture into small or large circles. You can choose to fry your meatballs or cook them in the oven! I would recommend baking the meatballs. It might also be helpful to bake them because the temperature will be ready to bake the final product, in the end.



Step 6. If you decided to bake the meatballs, cook them for twelve to fifteen minutes at 350 Degrees Fahrenheit, or fry with generous oil.



Step 7. Combine the baked meatballs with spaghetti. Mix in small amounts of pasta water (no more than 1.5 tbsp). You can consume this as is and sprinkle with basil, or you can lightly butter a saucepan and bake together for 10-minutes. Enjoy!
